This is the first Brookdale 9 inch chefs knife in Damascus steel. The balde is Matt James high carbon steel Damascus heat treated to 60 Rockwell. A promanat "Jelly-roll" pattern is visable on the blade, and will age like fine wine as the knife develps a patina. Stabilised Amboyna burl with brass pins for the handle gives the knife a touch of colour.
